- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans, drained and rinsed
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 cups cooked rice or quinoa
- Shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
- Add diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the diced tomatoes, black beans, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes until heated through.
- Serve the beef mixture over cooked rice or quinoa. Top with shredded cheese and fresh cilantro if desired.
