- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon granulated sugar
- 2 large eggs
- 1 1/2 cups milk

Instructions
- In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
- In another bowl, beat the eggs and then mix in the milk and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be smooth.
- Heat oil in a deep fryer or large pot to 375°F (190°C).
- Using a funnel or a squeeze bottle, pour the batter into the hot oil in a circular motion to create a crisscross pattern.
- Fry each funnel cake for about 2-3 minutes on each side or until golden brown.
- Remove from oil and drain on paper towels.
- Dust with powdered sugar before serving.
