Fresh strawberry shortcake is a delightful dessert that features layers of sweet, juicy strawberries, whipped cream, and tender shortcakes.

- 4 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 tablespoon sugar (for whipped cream)
- Additional whipped cream for serving
Instructions
- In a large bowl, combine the sliced strawberries and 1/4 cup granulated sugar. Toss to coat and let sit for 30 minutes to macerate.
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add 3/4 cup of heavy cream and vanilla extract to the flour mixture. Stir until just combined.
- Turn the dough out onto a floured surface and gently knead a few times. Pat into a 1-inch thick circle. Cut into rounds using a biscuit cutter or a glass.
- Place the shortcakes on the prepared baking sheet and bake for 12-15 minutes until golden brown.
- While the shortcakes are baking, whip the remaining heavy cream with 1 tablespoon of sugar until soft peaks form.
- To assemble, cut the shortcakes in half, layer with strawberries and whipped cream, and top with the other half. Serve immediately.
Notes
- For extra flavor, add a splash of lemon juice to the strawberries while macerating.
- You can substitute the heavy cream with coconut cream for a dairy-free option.
