Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 tablespoons ice water
  • 2 cups fresh apricots, halved and pitted
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon apricot preserves

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, butter, granulated sugar, and salt. Mix until crumbly.
  3. Add the egg yolk and ice water, mixing until the dough forms a ball. Press the dough into a 9-inch tart pan.
  4. Blind bake the crust for 15 minutes. Remove from the oven and let cool.
  5. In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  6. Spread the whipped cream mixture evenly over the cooled tart crust.
  7. Arrange the halved apricots, cut side up, over the whipped cream.
  8. Heat the apricot preserves in a small saucepan until melted, then brush over the apricots for a glossy finish.
  9. Chill the tart in the refrigerator for at least 1 hour before serving.

  • Choose ripe apricots for the best flavor.
  • This tart can be made a day in advance; just add the apricot preserves right before serving.
