- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 tablespoons ice water
- 2 cups fresh apricots, halved and pitted
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon apricot preserves
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, butter, granulated sugar, and salt. Mix until crumbly.
- Add the egg yolk and ice water, mixing until the dough forms a ball. Press the dough into a 9-inch tart pan.
- Blind bake the crust for 15 minutes. Remove from the oven and let cool.
- In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Spread the whipped cream mixture evenly over the cooled tart crust.
- Arrange the halved apricots, cut side up, over the whipped cream.
- Heat the apricot preserves in a small saucepan until melted, then brush over the apricots for a glossy finish.
- Chill the tart in the refrigerator for at least 1 hour before serving.

- Choose ripe apricots for the best flavor.
- This tart can be made a day in advance; just add the apricot preserves right before serving.
