- 8 oz dark chocolate, chopped
- 2 tablespoons unsalted butter
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
- Chocolate shavings or berries for garnish
Instructions
- Melt the dark chocolate and butter together in a double boiler, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk egg yolks and sugar together until pale and fluffy. Stir in the melted chocolate mixture and vanilla extract until well combined.
- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture until no white streaks remain.
- In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until fully incorporated.
- Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours or until set.
- Before serving, garnish with chocolate shavings or fresh berries.
Notes
- For a lighter mousse, you can substitute half of the heavy cream with whipped aquafaba (chickpea water).
- Ensure the chocolate is of high quality for the best flavor.
- You can add a splash of liqueur like Grand Marnier or Kahlua for an extra kick.
