  • 4 slices Canadian bacon
  • 1/2 cup Butter
  • 3 Egg yolks
  • 1 tablespoon Lemon juice
  • to taste Salt
  • to taste Black pepper

Instructions

  1. Poach the eggs in simmering water for about 3-4 minutes until the whites are set but the yolks are still runny.
  2. While the eggs are poaching, toast the English muffins until golden brown.
  3. In a skillet, cook the Canadian bacon over medium heat until heated through.
  4. For the hollandaise sauce, melt the butter in a saucepan. In a bowl, whisk together the egg yolks and lemon juice until pale.
  5. Gradually add the melted butter to the egg mixture while whisking continuously until thick and creamy. Season with salt and pepper.
  6. To assemble, place a slice of Canadian bacon on each English muffin half, top with a poached egg, and drizzle with hollandaise sauce.
