Description

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 cups sticky rice
  • 2 cups broccoli florets
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • for garnish green onions, sliced

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, honey, garlic, and ginger to make the teriyaki sauce.
  2. In a separate bowl, mix cornstarch and water until smooth, then add to the teriyaki sauce. Stir until combined.
  3. In a skillet over medium heat, add chicken thighs and pour the teriyaki sauce over them. Cook for about 6-7 minutes per side, or until cooked through. Remove chicken and let it rest before slicing.
  4. In a pot, cook sticky rice according to package instructions.
  5. For the roasted broccoli, preheat the oven to 400°F (200°C). Toss broccoli with sesame oil and place it on a baking sheet. Roast for about 15 minutes, then sprinkle with sesame seeds.
  6. To serve, place sticky rice on a plate, top with sliced teriyaki chicken, and serve roasted broccoli on the side. Garnish with green onions.

Notes

  • You can substitute chicken thighs with chicken breasts if preferred.
  • Feel free to add other vegetables to the roasted broccoli, such as bell peppers or carrots.
