This easy teriyaki chicken recipe is perfect for a quick weeknight dinner. Serve it with sticky rice and roasted sesame broccoli for a delicious and satisfying meal.

- 1 lb boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 cups sticky rice
- 2 cups broccoli florets
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- for garnish green onions, sliced
Instructions
- In a bowl, whisk together soy sauce, brown sugar, honey, garlic, and ginger to make the teriyaki sauce.
- In a separate bowl, mix cornstarch and water until smooth, then add to the teriyaki sauce. Stir until combined.
- In a skillet over medium heat, add chicken thighs and pour the teriyaki sauce over them. Cook for about 6-7 minutes per side, or until cooked through. Remove chicken and let it rest before slicing.
- In a pot, cook sticky rice according to package instructions.
- For the roasted broccoli, preheat the oven to 400°F (200°C). Toss broccoli with sesame oil and place it on a baking sheet. Roast for about 15 minutes, then sprinkle with sesame seeds.
- To serve, place sticky rice on a plate, top with sliced teriyaki chicken, and serve roasted broccoli on the side. Garnish with green onions.
Notes
- You can substitute chicken thighs with chicken breasts if preferred.
- Feel free to add other vegetables to the roasted broccoli, such as bell peppers or carrots.
