- 1 cup cherry tomatoes, halved

- 1 cup mozzarella balls or cubed mozzarella cheese
- 1/2 cup olives (black or green), sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, mozzarella, olives, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- Taste and adjust seasoning if necessary.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
