Instructions
- In a large bowl, combine diced chicken breast, cherry tomatoes, cucumber, corn, and avocado.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle shredded cheese on top and garnish with fresh basil if desired.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
