- 4 whole wheat tortillas
- 1 cup hummus
- 1 cup shredded carrots
- 1 cup cucumber, thinly sliced
- 1 cup bell peppers, thinly sliced
- 1 cup cooked chicken or turkey, shredded (optional)
- 1 cup spinach or mixed greens
- Salt and pepper to taste
Instructions
- Lay out the whole wheat tortillas on a clean surface.
- Spread a generous layer of hummus over each tortilla.
- Layer shredded carrots, cucumber slices, bell peppers, chicken (if using), and spinach on one half of each tortilla.
- Season with salt and pepper to taste.
- Fold the tortilla over to create a wrap, and slice in half to serve.
