Instructions
- In a large skillet, heat olive oil over medium heat. Add minced garlic, diced onion, and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the canned diced tomatoes, taco seasoning, black beans, and corn. Cook for an additional 5 minutes.
- Add the shredded rotisserie chicken to the skillet. Stir until heated through, about 3-4 minutes.
- Top with shredded cheddar cheese and cover the skillet until the cheese is melted.
- Serve in tortillas and garnish with fresh cilantro.
