Instructions
- Heat olive oil in a large skillet over medium-high heat.

- Stir in the minced garlic and ginger, cooking for an additional 1 minute.
- Add the mixed vegetables and soy sauce, stirring to combine. Cook for another 5 minutes, or until the vegetables are tender.
