Ingredients

- 2 lbs ground beef
- 1 lb sausage
- 1 large onion, chopped
- 2 bell peppers, chopped
- 4 cloves garlic, minced
- 2 cans (15 oz each) black beans, rinsed and drained
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (8 oz) tomato sauce
- 2 cups corn kernels, frozen or canned
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 12 large tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- Sour cream and salsa for serving
Instructions
- In a large skillet over medium heat, cook ground beef and sausage until browned. Drain excess fat.
- Add chopped onion, bell peppers, and minced garlic to the skillet. Cook until softened, about 5 minutes.
- Stir in black beans, diced tomatoes, tomato sauce, corn, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 10 minutes.
- Preheat the oven to 350°F (175°C).
- Spread a thin layer of the meat mixture in a large baking dish. Layer with tortillas, more meat mixture, and cheese. Repeat until all ingredients are used, finishing with a layer of cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before serving. Serve with sour cream and salsa on the side.
Notes
- Feel free to add or substitute your favorite vegetables.
- This recipe can be made ahead of time and refrigerated before baking.
- Leftovers can be stored in the refrigerator for up to 3 days.
