Easy Memorial Day Food to Feed a Big Hungry Crowd with Perfect Flavor

Ingredients

  • 2 lbs ground beef
  • 1 lb sausage
  • 1 large onion, chopped
  • 2 bell peppers, chopped
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) black beans, rinsed and drained
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups corn kernels, frozen or canned
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 12 large tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Sour cream and salsa for serving

Instructions

  1. In a large skillet over medium heat, cook ground beef and sausage until browned. Drain excess fat.
  2. Add chopped onion, bell peppers, and minced garlic to the skillet. Cook until softened, about 5 minutes.
  3. Stir in black beans, diced tomatoes, tomato sauce, corn, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 10 minutes.
  4. Preheat the oven to 350°F (175°C).
  5. Spread a thin layer of the meat mixture in a large baking dish. Layer with tortillas, more meat mixture, and cheese. Repeat until all ingredients are used, finishing with a layer of cheese on top.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  7. Let cool for a few minutes before serving. Serve with sour cream and salsa on the side.

Notes

  • Feel free to add or substitute your favorite vegetables.
  • This recipe can be made ahead of time and refrigerated before baking.
  • Leftovers can be stored in the refrigerator for up to 3 days.
