- 2 pounds boneless, skinless chicken thighs
- 1 cup teriyaki sauce
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 tablespoon honey
- 1 cup pineapple chunks (optional)
- 2 cups broccoli florets (optional)
- Cooked fluffy steamed rice, for serving
- Sesame seeds and sliced green onions, for garnish
Instructions
- Place the chicken thighs in the crockpot.
- In a separate bowl, mix together the teriyaki sauce, minced garlic, minced ginger, and honey. Pour the mixture over the chicken.
- If using, add the pineapple chunks and broccoli florets on top of the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken with two forks and stir to combine with the sauce.
- Serve the teriyaki chicken over fluffy steamed rice. Garnish with sesame seeds and sliced green onions, if desired.
Notes
- Feel free to add your favorite vegetables such as bell peppers or snap peas.
- For a thicker sauce, you can remove the chicken once cooked, mix 1 tablespoon of cornstarch with 2 tablespoons of water, and stir it into the sauce. Cook on high for an additional 15 minutes.
