Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon honey
  • 1 cup pineapple chunks (optional)
  • 2 cups broccoli florets (optional)
  • Cooked fluffy steamed rice, for serving
  • Sesame seeds and sliced green onions, for garnish

Instructions

  1. Place the chicken thighs in the crockpot.
  2. In a separate bowl, mix together the teriyaki sauce, minced garlic, minced ginger, and honey. Pour the mixture over the chicken.
  3. If using, add the pineapple chunks and broccoli florets on top of the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Once cooked, shred the chicken with two forks and stir to combine with the sauce.
  6. Serve the teriyaki chicken over fluffy steamed rice. Garnish with sesame seeds and sliced green onions, if desired.

Notes

  • Feel free to add your favorite vegetables such as bell peppers or snap peas.
  • For a thicker sauce, you can remove the chicken once cooked, mix 1 tablespoon of cornstarch with 2 tablespoons of water, and stir it into the sauce. Cook on high for an additional 15 minutes.
