Description
A quick and healthy stir fry that combines tender chicken, crunchy cabbage, and vibrant vegetables served over fluffy jasmine rice.

- 1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips
- 4 cups green cabbage, thinly sliced
- 1 cup bell peppers, sliced (any color)
- 1 cup carrots, julienned
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- 4 cups cooked jasmine rice
- Sesame seeds and green onions for garnish (optional)
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the sliced chicken to the pan and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the sliced cabbage, bell peppers, and carrots to the skillet. Stir fry for about 5 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet. Add the soy sauce, oyster sauce, and sesame oil. Stir to combine and heat through for another 2 minutes.
- Serve the stir fry over steamed jasmine rice, garnished with sesame seeds and chopped green onions if desired.
Notes
- Feel free to customize the vegetables based on your preference or what you have on hand.
- For added flavor, marinate the chicken in soy sauce and ginger for 15-30 minutes before cooking.
- This dish can also be made with leftover cooked chicken or turkey.
