- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 8 small flour or corn tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1 avocado, sliced (optional)
- Chopped cilantro for garnish (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if necessary.
- Add the black beans, corn, and taco seasoning to the skillet. Stir to combine and cook for about 5 minutes until heated through.
- Warm the tortillas in a separate pan or microwave until soft.
- To assemble, place a portion of the meat mixture in each tortilla, top with cheese, salsa, and avocado if using.
- Roll up the tortillas and serve warm, garnished with cilantro.
