  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes
  • 1 packet taco seasoning
  • 8 large tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • Optional toppings: sour cream, avocado, chopped cilantro

Instructions

  1. In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
  2. Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for another 5-7 minutes until heated through.
  3. Lay out the tortillas and spoon the beef mixture evenly onto each tortilla. Top with shredded cheese.
  4. Roll the tortillas tightly and place seam-side down on a greased grill or campfire-safe pan.
  5. Grill or heat over the campfire for 5-10 minutes, turning occasionally until the tortillas are crispy and the cheese is melted.
  6. Serve with salsa and optional toppings.
