- 1 lb ground beef or turkey
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (14 oz) diced tomatoes
- 1 packet taco seasoning
- 8 large tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- Optional toppings: sour cream, avocado, chopped cilantro
Instructions
- In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
- Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for another 5-7 minutes until heated through.
- Lay out the tortillas and spoon the beef mixture evenly onto each tortilla. Top with shredded cheese.
- Roll the tortillas tightly and place seam-side down on a greased grill or campfire-safe pan.
- Grill or heat over the campfire for 5-10 minutes, turning occasionally until the tortillas are crispy and the cheese is melted.
- Serve with salsa and optional toppings.
