These easy BBQ side dishes are perfect for any summer cookout and can be made in under 30 minutes! From refreshing salads to savory baked beans, these recipes will complement your BBQ perfectly.


Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cooked quinoa
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup coleslaw mix
  • 1/2 cup BBQ sauce

Instructions

  1. In a large bowl, combine corn, cherry tomatoes, cucumber, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over the vegetable mixture and toss to combine. Set aside.
  3. In another bowl, mix together black beans, cooked quinoa, and shredded cheese. Stir until well combined.
  4. For a quick coleslaw, mix coleslaw mix with BBQ sauce until well coated.
  5. Serve the corn salad, black bean quinoa mix, and coleslaw together as delicious side dishes for your BBQ!
