Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey
- 1/2 cup chopped nuts (almonds or walnuts)
- 1/4 cup shredded coconut (optional)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a food processor, combine dried apricots, rolled oats, almond butter, honey, vanilla extract, and salt. Pulse until the mixture is well combined and sticky.
- Add chopped nuts and shredded coconut, if using. Pulse a few more times to incorporate.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper and refrigerate for about 30 minutes to set.
- Store in an airtight container in the refrigerator for up to a week.
Notes
- You can substitute almond butter with peanut butter or any nut butter of your choice.
