Instructions

  1. In a food processor, combine dried apricots, rolled oats, almond butter, honey, vanilla extract, and salt. Pulse until the mixture is well combined and sticky.
  2. Add chopped nuts and shredded coconut, if using. Pulse a few more times to incorporate.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  4. Place the energy bites on a baking sheet lined with parchment paper and refrigerate for about 30 minutes to set.
