Ingredients

  • 2 pounds small potatoes
  • 1/4 cup olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 cup, chopped green onions
  • 1/4 cup, chopped fresh dill
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the small potatoes and place them in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly. Once cool enough to handle, place them on a baking sheet lined with parchment paper.
  4. Using a potato masher or the bottom of a glass, gently smash each potato until flattened but still intact.
  5. Drizzle the olive oil over the smashed potatoes, then sprinkle with sea salt, black pepper, garlic powder, and paprika.
  6. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.
  7. While the potatoes are baking, prepare the dressing by combining the sour cream, mayonnaise, lemon juice, green onions, and dill in a mixing bowl. Season with salt and pepper to taste.
  8. Once the potatoes are done baking, let them cool slightly before mixing them with the dressing.
  9. Gently fold the crispy potatoes into the dressing until well coated.

Notes
