A delicious and crispy take on potato salad that combines the best of both worlds: the creaminess of traditional potato salad and the delightful crunch of crispy smashed potatoes.

- 2 pounds small potatoes
- 1/4 cup olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 cup, chopped green onions
- 1/4 cup, chopped fresh dill
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
Instructions
- Preheat your oven to 425°F (220°C).
- Wash the small potatoes and place them in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly. Once cool enough to handle, place them on a baking sheet lined with parchment paper.
- Using a potato masher or the bottom of a glass, gently smash each potato until flattened but still intact.
- Drizzle the olive oil over the smashed potatoes, then sprinkle with sea salt, black pepper, garlic powder, and paprika.
- Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.
- While the potatoes are baking, prepare the dressing by combining the sour cream, mayonnaise, lemon juice, green onions, and dill in a mixing bowl. Season with salt and pepper to taste.
- Once the potatoes are done baking, let them cool slightly before mixing them with the dressing.
- Gently fold the crispy potatoes into the dressing until well coated.
- Serve warm or at room temperature, and enjoy your Crispy Smashed Potato Salad!
Notes
- Feel free to add in other herbs like parsley or chives for added flavor.
- You can also toss in some cooked bacon bits for a smoky crunch.
- This salad can be made ahead of time; just keep the dressing separate until ready to serve.
