- 2 cups rotini pasta
- 1 cup cooked chicken, shredded
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water until cool.
- In a large mixing bowl, combine the cooked rotini, shredded chicken, cherry tomatoes, cucumber, and red onion.
- In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the pasta salad and toss to combine all ingredients evenly.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
