- 2 ripe avocados, pitted and peeled
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1/4 cup fresh basil leaves
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil (optional)
- Parmesan cheese for serving (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a food processor, combine the avocados, garlic, lemon juice, basil, salt, and pepper. Blend until smooth and creamy.
- In a large bowl, combine the cooked pasta and avocado sauce, tossing to coat the pasta evenly.
- Add the cherry tomatoes and olive oil (if using), and gently mix until combined.
- Serve immediately, topped with Parmesan cheese if desired.
