- 1 onion, quartered

Instructions
- Place the corned beef brisket in a large pot or slow cooker.
- Add the quartered onion, minced garlic, beef broth, water, and pickling spice.
- Cover and cook on low for 8-10 hours in a slow cooker, or simmer on the stovetop for 3-4 hours until tender.
- In the last hour of cooking, add the chopped carrots, celery, and cabbage wedges.
- Once done, remove the brisket from the pot and let it rest for 10-15 minutes before slicing against the grain.
- Serve with vegetables and a side of mustard for dipping.
Notes
- For added flavor, let the brisket marinate in the spices for 24 hours before cooking.
- You can also cook the brisket in the oven at 300°F for 3-4 hours, covered in foil.
