  • 1 onion, quartered

  • 2 tablespoons pickling spice
  • 3 carrots, chopped
  • 2 stalks celery, chopped
  • 1 small head of cabbage, cut into wedges

Instructions

  1. Place the corned beef brisket in a large pot or slow cooker.
  2. Add the quartered onion, minced garlic, beef broth, water, and pickling spice.
  3. Cover and cook on low for 8-10 hours in a slow cooker, or simmer on the stovetop for 3-4 hours until tender.
  4. In the last hour of cooking, add the chopped carrots, celery, and cabbage wedges.
  5. Once done, remove the brisket from the pot and let it rest for 10-15 minutes before slicing against the grain.
  6. Serve with vegetables and a side of mustard for dipping.

Notes

  • For added flavor, let the brisket marinate in the spices for 24 hours before cooking.
  • You can also cook the brisket in the oven at 300°F for 3-4 hours, covered in foil.
  • Leftover corned beef can be used for sandwiches or hash.
