- 4–5 lbs corned beef brisket
- 1 onion, quartered
- 4 cloves garlic, minced
- 4–6 medium carrots, cut into large chunks
- 4–6 medium potatoes, quartered
- 1–2 cups beef broth or water
- 2 teaspoons black peppercorns
- 2–3 bay leaves
- 1 tablespoon mustard seeds
- 1 tablespoon apple cider vinegar
- Salt to taste (if needed)
Instructions
- Place the quartered onion and minced garlic in the bottom of the crock pot.
- Layer the carrots and potatoes on top of the onions and garlic.
- Place the corned beef brisket on top of the vegetables, fat side up.
- Pour in the beef broth or water until it reaches about half the height of the brisket.
- Sprinkle the black peppercorns, bay leaves, and mustard seeds over the brisket.
- Drizzle the apple cider vinegar over the brisket.
- Cover and cook on low for 8-10 hours or high for 4-5 hours until the meat is tender.
- Once cooked, remove the brisket and let it rest for a few minutes before slicing against the grain.
Notes
- For extra flavor, you can add a splash of beer to the broth.
- Feel free to add other vegetables like cabbage or parsnips based on your preference.
