  • 1/4 cup dark chocolate chips or nuts (optional)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, whole wheat flour, baking soda, cinnamon, and salt.
  3. In another bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Fold in the dark chocolate chips or nuts if using.
  6. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each cookie slightly with the back of a spoon.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute almond butter with any nut or seed butter of your choice.
  • For a vegan option, use maple syrup instead of honey.
