- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 eggs
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each cod fillet into the egg, then coat with the breadcrumb mixture, pressing to adhere.
- Place the coated fillets on a baking sheet lined with parchment paper.
- Drizzle the olive oil over the fillets.
- Bake for 15-20 minutes or until the fish flakes easily with a fork and is golden brown.
- Garnish with fresh parsley if desired and serve immediately.
