- 4 cod fillets (about 6 ounces each)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
Instructions
- Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Add the cod fillets to the skillet, skin-side down, and cook for 4-5 minutes without moving them until the skin is crispy.
- Carefully flip the fillets over and add the minced garlic to the pan. Cook for an additional 3-4 minutes or until the fish is opaque and flakes easily with a fork.
- Add the lemon slices to the skillet for the last minute of cooking to infuse flavor.
- Remove the cod from the skillet and garnish with fresh parsley before serving.
