  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  3. Add the cod fillets to the skillet, skin-side down, and cook for 4-5 minutes without moving them until the skin is crispy.
  4. Carefully flip the fillets over and add the minced garlic to the pan. Cook for an additional 3-4 minutes or until the fish is opaque and flakes easily with a fork.
  5. Add the lemon slices to the skillet for the last minute of cooking to infuse flavor.
  6. Remove the cod from the skillet and garnish with fresh parsley before serving.
