A tropical and creamy coconut dessert that is perfect for any occasion. This coconut cream pie features a buttery crust filled with a rich coconut custard and topped with freshly whipped cream and toasted coconut flakes.

  • 1 pre-made pie crust
  • 2 cups (480ml) coconut milk
  • 1 cup (240ml) whole milk
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (30g) cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup (100g) shredded coconut
  • 1 cup (240ml) heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 cup (40g) toasted coconut flakes for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the pre-made pie crust in a pie dish and bake for 10-12 minutes until lightly golden. Remove from oven and let cool.
  3. In a medium saucepan, combine coconut milk, whole milk, sugar, cornstarch, and salt. Whisk together until smooth.
  4. Cook over medium heat, stirring frequently, until the mixture thickens and begins to bubble.
  5. In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to temper the eggs, then add the egg mixture back to the saucepan.
  6. Continue cooking for 2-3 minutes until thickened. Remove from heat and stir in vanilla extract and shredded coconut.
  7. Pour the coconut custard into the baked pie crust and smooth the top. Let it cool to room temperature, then refrigerate for at least 4 hours or until set.
  8. Before serving, whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe the whipped cream over the chilled pie.
  9. Garnish with toasted coconut flakes and serve.

Notes

  • For a gluten-free option, use a gluten-free pie crust.
  • You can substitute unsweetened shredded coconut for a less sweet pie.
