Description
A tropical and creamy coconut dessert that is perfect for any occasion. This coconut cream pie features a buttery crust filled with a rich coconut custard and topped with freshly whipped cream and toasted coconut flakes.

- 1 pre-made pie crust
- 2 cups (480ml) coconut milk
- 1 cup (240ml) whole milk
- 3/4 cup (150g) granulated sugar
- 1/4 cup (30g) cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup (100g) shredded coconut
- 1 cup (240ml) heavy cream
- 2 tablespoons powdered sugar
- 1/2 cup (40g) toasted coconut flakes for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Place the pre-made pie crust in a pie dish and bake for 10-12 minutes until lightly golden. Remove from oven and let cool.
- In a medium saucepan, combine coconut milk, whole milk, sugar, cornstarch, and salt. Whisk together until smooth.
- Cook over medium heat, stirring frequently, until the mixture thickens and begins to bubble.
- In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to temper the eggs, then add the egg mixture back to the saucepan.
- Continue cooking for 2-3 minutes until thickened. Remove from heat and stir in vanilla extract and shredded coconut.
- Pour the coconut custard into the baked pie crust and smooth the top. Let it cool to room temperature, then refrigerate for at least 4 hours or until set.
- Before serving, whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe the whipped cream over the chilled pie.
- Garnish with toasted coconut flakes and serve.
Notes
- For a gluten-free option, use a gluten-free pie crust.
- You can substitute unsweetened shredded coconut for a less sweet pie.
- Make sure to refrigerate the pie for at least 4 hours to ensure it sets properly.
