- 1 cup unsweetened shredded coconut
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the shredded coconut, flour, baking soda, and salt. Set aside.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Mix in the sweetened condensed milk and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving space between each cookie.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
- Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For an extra coconut flavor, you can use coconut extract in place of vanilla.
- These cookies can be stored in an airtight container at room temperature for up to a week.
