Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the shredded coconut, flour, baking soda, and salt. Set aside.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Mix in the sweetened condensed milk and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  8. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra coconut flavor, you can use coconut extract in place of vanilla.
  • These cookies can be stored in an airtight container at room temperature for up to a week.
