A vibrant and flavorful grilled chicken dish marinated in citrus juices and served with a refreshing fresh herb salad.

- 4 boneless, skinless chicken breasts
- 1/4 cup fresh orange juice
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup mixed fresh herbs (parsley, cilantro, basil)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
Instructions
- In a bowl, whisk together the orange juice, lemon juice, olive oil, garlic, salt, and black pepper.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour, or up to 4 hours.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until cooked through and no longer pink in the center.
- While the chicken is grilling, prepare the fresh herb salad. In a large bowl, combine the mixed herbs, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together the balsamic vinegar and honey. Drizzle over the salad and toss gently to combine.
- Once the chicken is done, let it rest for a few minutes before slicing.
- Serve the grilled chicken topped with the fresh herb salad.
Notes
- For extra flavor, marinate the chicken overnight.
- Feel free to swap in your favorite herbs for the salad.
