A vibrant and flavorful grilled chicken dish marinated in citrus juices and served with a refreshing fresh herb salad.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mixed fresh herbs (parsley, cilantro, basil)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. In a bowl, whisk together the orange juice, lemon juice, olive oil, garlic, salt, and black pepper.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour, or up to 4 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until cooked through and no longer pink in the center.
  5. While the chicken is grilling, prepare the fresh herb salad. In a large bowl, combine the mixed herbs, cherry tomatoes, cucumber, and red onion.
  6. In a small bowl, whisk together the balsamic vinegar and honey. Drizzle over the salad and toss gently to combine.
  7. Once the chicken is done, let it rest for a few minutes before slicing.
  8. Serve the grilled chicken topped with the fresh herb salad.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Feel free to swap in your favorite herbs for the salad.
