Ingredients

  • 8 ounces fettuccine pasta
  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts, cut into strips
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken strips with salt and pepper.
  3. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth. Add nutmeg if using.
  6. Add the cooked fettuccine and chicken back into the skillet, tossing to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
  7. Serve immediately, garnished with fresh parsley.
