- 1 lb chicken breast, sliced into thin strips
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1 cup carrots, julienned
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a bowl, combine chicken strips, soy sauce, and cornstarch. Mix well and let it marinate for 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken to the pan and stir-fry until golden brown and cooked through, about 5-7 minutes.
- Add garlic and ginger; stir for about 30 seconds until fragrant.
- Add bell peppers, broccoli, and carrots to the pan. Stir-fry for an additional 4-5 minutes until vegetables are tender-crisp.
- Season with salt and pepper to taste.
- Serve hot over cooked rice or noodles.
