A simple and delicious chicken piccata recipe that brings together tender chicken breasts, vibrant lemon, and capers for a quick and flavorful dinner.

- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup all-purpose flour, for dredging
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1/2 cup fresh lemon juice
- 1/4 cup capers, drained
- 1/4 cup fresh parsley, chopped, for garnish
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Dredge each chicken breast in flour, shaking off excess.
- In a large skillet, melt 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
- Add chicken breasts to the skillet and cook until browned, about 3-4 minutes per side. Remove chicken from the skillet and set aside.
- In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Return the chicken to the skillet and cook for an additional 5 minutes, or until the chicken is cooked through.
- Remove chicken from the skillet again and stir in the remaining 2 tablespoons of butter until melted.
- Pour the sauce over the chicken and garnish with fresh parsley before serving.
