  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 1/4 cup fresh parsley, chopped, for garnish

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Dredge each chicken breast in flour, shaking off excess.
  3. In a large skillet, melt 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
  4. Add chicken breasts to the skillet and cook until browned, about 3-4 minutes per side. Remove chicken from the skillet and set aside.
  5. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Return the chicken to the skillet and cook for an additional 5 minutes, or until the chicken is cooked through.
  7. Remove chicken from the skillet again and stir in the remaining 2 tablespoons of butter until melted.
  8. Pour the sauce over the chicken and garnish with fresh parsley before serving.
