- 8 oz. penne pasta
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a simmer. Reduce heat and stir in the heavy cream and Parmesan cheese.
- Season with salt and pepper to taste, and cook for another 2-3 minutes until the sauce thickens.
- Add the cooked penne pasta to the skillet and toss to coat in the creamy sauce.
- Serve immediately, garnished with fresh parsley.
