- 2 cups cooked rice (preferably day-old)
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 2 eggs, beaten
- 3 green onions, chopped
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked, then mix with the vegetables.
- Add the diced chicken to the skillet and stir to combine with the vegetables and eggs.
- Add the cooked rice to the skillet and pour the soy sauce and oyster sauce (if using) over the top. Stir everything together until well combined and heated through.
- Add the chopped green onions and season with salt and pepper to taste. Stir well and cook for another minute.
