Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked, then mix with the vegetables.
  4. Add the diced chicken to the skillet and stir to combine with the vegetables and eggs.
  5. Add the cooked rice to the skillet and pour the soy sauce and oyster sauce (if using) over the top. Stir everything together until well combined and heated through.
  6. Add the chopped green onions and season with salt and pepper to taste. Stir well and cook for another minute.
  7. Serve hot and enjoy your homemade chicken fried rice!
