  • 2 tablespoons olive oil
  • 3 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Season the chicken breasts with salt and pepper, and add them to the skillet. Cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Add the chopped spinach and cook until wilted.
  5. Pour in the heavy cream and bring to a gentle simmer.
  6. Stir in the Parmesan cheese and Italian seasoning, cooking until the sauce thickens slightly.
  7. Return the chicken to the skillet, spooning the sauce over the chicken.
  8. Garnish with fresh parsley and serve hot.
