- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cups fresh spinach, chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Season the chicken breasts with salt and pepper, and add them to the skillet. Cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add the chopped spinach and cook until wilted.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the Parmesan cheese and Italian seasoning, cooking until the sauce thickens slightly.
- Return the chicken to the skillet, spooning the sauce over the chicken.
- Garnish with fresh parsley and serve hot.
