Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup cream of chicken soup
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the rice, chicken broth, cream of chicken soup, mixed vegetables, onion, garlic, garlic powder, onion powder, salt, and pepper.
  3. Place the chicken breasts in a greased 9×13 inch baking dish. Pour the rice mixture evenly over the chicken.
  4. Cover the baking dish with aluminum foil and bake for 30 minutes.
  5. Remove the foil and sprinkle cheddar cheese on top (if using). Return to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
  6. Let it cool for a few minutes before serving.
