A comforting and easy chicken and rice casserole that’s perfect for a weeknight dinner. This one-pot meal is creamy, flavorful, and delicious!

- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup cream of chicken soup
- 1 cup mixed vegetables (frozen or fresh)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the rice, chicken broth, cream of chicken soup, mixed vegetables, onion, garlic, garlic powder, onion powder, salt, and pepper.
- Place the chicken breasts in a greased 9×13 inch baking dish. Pour the rice mixture evenly over the chicken.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and sprinkle cheddar cheese on top (if using). Return to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
- Let it cool for a few minutes before serving.
