Ingredients

  • 4 slices of bacon
  • 4 large eggs
  • 2 cups of diced potatoes
  • 1 cup of shredded cheese (cheddar or your choice)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of paprika
  • 1 cup of cherry tomatoes (optional)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Toss diced potatoes in olive oil, garlic powder, paprika, salt, and pepper.
  3. Place the seasoned potatoes in the air fryer basket and cook for 10-12 minutes.
  4. While the potatoes are cooking, place the bacon in the air fryer and cook for about 8 minutes or until crispy.
  5. In a bowl, whisk the eggs with salt and pepper.
  6. Once the potatoes are tender and crispy, push them to one side of the basket and pour the eggs into the other side.
  7. Cook for an additional 5-7 minutes or until the eggs are set.
  8. Sprinkle shredded cheese over the eggs and let it melt for the last minute of cooking.
  9. Serve with crispy bacon and cherry tomatoes on the side.

Notes

  • Feel free to add your favorite vegetables or spices to customize the egg mixture.
