Quick and easy breakfast recipes made in the air fryer, perfect for busy mornings!
Ingredients

- 4 slices of bacon
- 4 large eggs
- 2 cups of diced potatoes
- 1 cup of shredded cheese (cheddar or your choice)
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 tablespoon of olive oil
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of paprika
- 1 cup of cherry tomatoes (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- Toss diced potatoes in olive oil, garlic powder, paprika, salt, and pepper.
- Place the seasoned potatoes in the air fryer basket and cook for 10-12 minutes.
- While the potatoes are cooking, place the bacon in the air fryer and cook for about 8 minutes or until crispy.
- In a bowl, whisk the eggs with salt and pepper.
- Once the potatoes are tender and crispy, push them to one side of the basket and pour the eggs into the other side.
- Cook for an additional 5-7 minutes or until the eggs are set.
- Sprinkle shredded cheese over the eggs and let it melt for the last minute of cooking.
- Serve with crispy bacon and cherry tomatoes on the side.
Notes
- Feel free to add your favorite vegetables or spices to customize the egg mixture.
- You can also substitute bacon with turkey bacon or sausage.
