Description
A flavorful beer marinade that infuses chicken thighs with rich taste, perfect for grilling or roasting.

- 6 chicken thighs, skin-on and bone-in
- 1 cup (240ml) beer (lager or pale ale recommended)
- 1/4 cup (60ml) olive oil
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the beer, olive oil, minced garlic, soy sauce, Dijon mustard, honey, dried thyme, smoked paprika, salt, and pepper. Whisk until well combined.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap or transfer to a resealable plastic bag.
- Refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
- Preheat your grill or oven to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken thighs for 6-8 minutes per side, or until they reach an internal temperature of 165°F (74°C). If using the oven, roast at 400°F (200°C) for about 35-40 minutes.
- Let the chicken rest for a few minutes before serving.
Notes
- For a spicier marinade, add crushed red pepper flakes to taste.
- You can use any type of beer, but a lager or pale ale works best for a balanced flavor.
- Serve with grilled vegetables or a fresh salad for a complete meal.
