These BBQ Pulled Chicken Sliders are tender and flavorful, topped with crunchy coleslaw for the perfect bite-sized meal.

- 2 lbs boneless, skinless chicken breasts
- 1 cup BBQ sauce (your choice)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 12 slider buns
- 2 cups coleslaw mix
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions
- In a slow cooker, combine the chicken breasts, BBQ sauce, olive oil, garlic powder, onion powder, salt, and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
- Once cooked, shred the chicken with two forks and mix it well with the BBQ sauce in the slow cooker.
- In a separate bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix until well combined.
- To assemble the sliders, place a generous amount of BBQ pulled chicken on the bottom half of each slider bun.
- Top with a spoonful of coleslaw and place the top half of the slider bun on top.
- Serve immediately and enjoy!
Notes
- You can use rotisserie chicken as a shortcut if you’re short on time.
- Feel free to customize the coleslaw with additional ingredients like diced apples or raisins for added flavor.
- These sliders can also be made ahead of time and reheated in the oven.
