This Authentic German Potato Salad is tangy, warm, and totally addictive. A perfect side dish for any gathering!

- 2 pounds of waxy potatoes, such as Yukon Gold
- 1/2 cup of diced onion
- 1/2 cup of apple cider vinegar
- 1/4 cup of vegetable oil
- 1 tablespoon of Dijon mustard
- 1 tablespoon of sugar
- Salt and pepper to taste
- 2 tablespoons of chopped fresh parsley (for garnish)
Instructions
- Wash and boil the potatoes in salted water until fork-tender, about 20 minutes. Drain and let cool slightly.
- While the potatoes are cooling, combine the diced onion, apple cider vinegar, vegetable oil, Dijon mustard, sugar, salt, and pepper in a large bowl. Whisk until well combined.
- Once the potatoes are cool enough to handle, peel and slice them into bite-sized pieces.
- Add the sliced potatoes to the bowl with the dressing and gently toss to combine, ensuring the potatoes are well coated.
- Let the salad sit for at least 20 minutes at room temperature to allow the flavors to meld.
- Before serving, garnish with chopped fresh parsley.

- For best results, use waxy potatoes as they hold their shape well.
