- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon cinnamon

Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the sliced apricots, granulated sugar, lemon juice, cornstarch, and vanilla extract. Toss until the apricots are well coated.
- Transfer the apricot mixture to a greased 9-inch pie dish or baking dish.
- In another bowl, mix together the flour, rolled oats, brown sugar, melted butter, cinnamon, and salt until crumbly.
- Sprinkle the crumble mixture evenly over the apricot layer in the dish.
- Bake for 30-35 minutes, or until the crumble is golden brown and the apricots are bubbly.
- Let it cool for a few minutes before serving. Enjoy warm with ice cream or whipped cream!
