Ingredients

  • 1 cup (120g) cake flour, sifted
  • 1 1/2 cups (300g) granulated sugar, divided
  • 12 large egg whites, at room temperature
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Have an ungreased 10-inch tube pan ready.
  2. In a small bowl, whisk together the cake flour and 3/4 cup of the granulated sugar. Set aside.
  3. In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until frothy.
  4. Add the cream of tartar and salt, and continue to beat until soft peaks form.
  5. Gradually add the remaining 3/4 cup of sugar, about 2 tablespoons at a time, beating on high speed until stiff, glossy peaks form.
  6. Add the vanilla extract and mix until incorporated.
  7. Sift the flour mixture over the egg whites in three additions, gently folding it in with a spatula after each addition until just combined. Be careful not to deflate the egg whites.
  8. Pour the batter into the prepared tube pan, smoothing the top with a spatula.
  9. Bake for 30-35 minutes, or until the cake is golden brown and springs back when lightly pressed.
  10. Remove the cake from the oven and immediately invert the pan onto a wire rack. Let it cool completely upside down.
  11. Once cooled, run a knife around the edges of the pan to release the cake. Invert onto a serving plate.

Notes

  • Make sure your mixing bowl and beaters are completely clean and free of grease for the best volume in the egg whites.
  • You can serve this cake plain, with a dusting of powdered sugar, or topped with fresh berries and whipped cream.
