- 2 cups bell peppers, sliced (any color)
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the sliced sausage, bell peppers, zucchini, and cherry tomatoes.
- Drizzle with olive oil and season with garlic powder, Italian seasoning, salt, and pepper. Toss until everything is well coated.
- Place the mixture in the air fryer basket in a single layer. You may need to work in batches if your air fryer is small.
- Cook for 12-15 minutes, shaking the basket halfway through cooking to ensure even browning.
- Once the sausage is cooked through and vegetables are tender, remove from the air fryer.
- Garnish with fresh parsley before serving.
