- 2 cups cauliflower florets
- 1 cup bell peppers, diced
- 1 cup zucchini, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder

- 1 teaspoon dried thyme or Italian seasoning (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the broccoli, cauliflower, bell peppers, and zucchini.
- Drizzle with olive oil and sprinkle with garlic powder, onion powder, salt, pepper, and thyme or Italian seasoning if using. Toss to coat evenly.
- Place the seasoned vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Cook for 12-15 minutes, shaking the basket halfway through to ensure even cooking, until vegetables are tender and slightly crispy.
- Remove from the air fryer and serve immediately.
