This air fryer roasted vegetables recipe is the easiest healthy side dish you can make! Perfectly cooked, flavorful, and colorful. A great addition to any meal.
Ingredients

- 2 cups of mixed vegetables (bell peppers, zucchini, carrots, broccoli, etc.)
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- 1 teaspoon of Italian seasoning (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- Wash and chop the vegetables into even-sized pieces.
- In a large bowl, combine the chopped vegetables, olive oil, garlic powder, onion powder, salt, pepper, and Italian seasoning. Toss well to coat the vegetables evenly.
- Place the seasoned vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Air fry the vegetables for 10-15 minutes, shaking the basket halfway through, until they are tender and slightly crispy.
- Once done, remove from the air fryer and serve immediately as a healthy side dish.

- Adjust the cooking time based on the type and size of vegetables.
