Ingredients

  • 2 cups of mixed vegetables (bell peppers, zucchini, carrots, broccoli, etc.)
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 teaspoon of Italian seasoning (optional)

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and chop the vegetables into even-sized pieces.
  3. In a large bowl, combine the chopped vegetables, olive oil, garlic powder, onion powder, salt, pepper, and Italian seasoning. Toss well to coat the vegetables evenly.
  4. Place the seasoned vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
  5. Air fry the vegetables for 10-15 minutes, shaking the basket halfway through, until they are tender and slightly crispy.
  6. Once done, remove from the air fryer and serve immediately as a healthy side dish.
