Ingredients

- 1 lb Chicken breast (Boneless, skinless)
- 2 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Paprika
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 3 cups Mixed vegetables (broccoli, bell pepper, carrots) (Fresh or frozen)
Instructions
- Preheat the air fryer to 380°F (193°C).
- In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Add chicken breast to the bowl and coat it evenly with the seasoning mix.
- Place the chicken breast in the air fryer basket and cook for 12-15 minutes or until the internal temperature reaches 165°F (74°C), flipping halfway through.
- While the chicken is cooking, prepare the mixed vegetables.
- Toss the mixed vegetables in a bit of olive oil and season with salt and pepper.
- Add the vegetables to the air fryer in the last 5-7 minutes of chicken cooking time.
- Once the chicken and vegetables are done, remove them from the air fryer.
- Allow them to cool slightly before portioning into meal prep containers.
Notes
- You can customize the seasoning based on your preference.
- Feel free to swap the chicken for turkey or tofu for a vegetarian option.
- Store prepped meals in the fridge for up to 4 days.
