Ingredients

  • 1 lb Chicken breast (Boneless, skinless)
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 3 cups Mixed vegetables (broccoli, bell pepper, carrots) (Fresh or frozen)

Instructions

  1. Preheat the air fryer to 380°F (193°C).
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  3. Add chicken breast to the bowl and coat it evenly with the seasoning mix.
  4. Place the chicken breast in the air fryer basket and cook for 12-15 minutes or until the internal temperature reaches 165°F (74°C), flipping halfway through.
  5. While the chicken is cooking, prepare the mixed vegetables.
  6. Toss the mixed vegetables in a bit of olive oil and season with salt and pepper.
  7. Add the vegetables to the air fryer in the last 5-7 minutes of chicken cooking time.
  8. Once the chicken and vegetables are done, remove them from the air fryer.
  9. Allow them to cool slightly before portioning into meal prep containers.

Notes

  • You can customize the seasoning based on your preference.
  • Feel free to swap the chicken for turkey or tofu for a vegetarian option.
  • Store prepped meals in the fridge for up to 4 days.
