Instructions
- Preheat the air fryer to 375°F (190°C).
- In a mixing bowl, combine the cubed beets, olive oil, salt, black pepper, and garlic powder (if using). Toss until the beets are evenly coated.
- Place the beets in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Air fry the beets for 15-20 minutes, shaking the basket halfway through cooking, until they are tender and slightly crispy on the edges.
- Remove from the air fryer and toss with fresh herbs if desired. Serve warm.
