Description
A festive dinner to celebrate St. Patrick’s Day with traditional Irish flavors.
Ingredients

- 3 lbs corned beef brisket
- 1 large onion, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup beer
- 2 carrots, chopped
- 2 potatoes, diced
- 1 small head of cabbage, cut into wedges
- 2 teaspoons mustard seeds
- 1 teaspoon black peppercorns
Instructions
- Place the corned beef in a large pot or slow cooker.
- Add onion, garlic, beef broth, beer, and spices.
- Cook on low for 8 hours or until tender.
- Add carrots and potatoes for the last 2 hours of cooking.
- Add cabbage during the last 30 minutes.
- Remove meat, slice, and serve with vegetables.

- Adjust spices to taste.
- Serve with mustard or horseradish.
- Pair with Irish soda bread.
