Description
A festive St. Patrick’s Day dinner featuring traditional Irish dishes.
Ingredients

- 2 lbs corned beef brisket
- 1 large onion, quartered
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup water
- 1 tbsp pickling spice
- 4 medium carrots, chopped
- 4 medium potatoes, quartered
- 1 small head of cabbage, cut into wedges
Instructions
- Place corned beef in a large pot with onion, garlic, beef broth, water, and pickling spice.
- Bring to a boil, then reduce heat and simmer for 2.5 hours.
- Add carrots and potatoes, and cook for an additional 30 minutes.
- Add cabbage and cook for another 15 minutes until tender.
- Remove beef and let rest before slicing.
- Serve with vegetables and cooking liquid.

- Adjust spices according to taste.
- Serve with mustard for extra flavor.
